THE DUCLAIR DUCK
If there is one well-known duck breed in Normandy, it is the Duclair duck, famous for its black feathers except for a white patch on its throat, hence nicknamed « the lawyer ». The town of Duclair organises the Duck and Gastronomy Festival every other year by inviting local producers to have a stand and exhibit ducks from their farm. During the week-end, different culinary demonstrations are programmed. This year’s guest of honour was Chef Fabrice DESVIGNES, Meilleur Ouvrier de France, who used to manage the kitchen of the Élysée Palace. The Ordre des Canardiers was among the partners of this festival and staged two demonstrations of Pressed Duck by Master Canardiers David BROCHET and Corentin SALI. One of these demonstrations was performed with Chef Arnaud GENTY, from « Le Parc » in Duclair.
